Edible Easter Architecture

To celebrate Easter this year, I decided to bake a fresh Bunny Bungalow in Carrot Cake Crunch Cookie with Cream Cheese Royal Icing. It was the first time I'd be using a cookie house as an Easter dessert, and I was curious how my nephews (aged 4 and 6) would engage with it.

I baked the cookie house at my apartment in the city, using my Edible Architect Bunny Bungalow cookie cutter construction set, and wrapped it in cellophane for easy transport to my parents' house in New Jersey.


Even wrapped, the lit Bunny Bungalow provided cheerful Easter decor and became an instant conversation starter. The Peeps, jelly beans, chocolate eggs, and other candies I'd used to fill and decorate the house were clearly visible, and it presented as an unmistakably Easter dessert. It provided a whimsical backdrop for our Easter dinner, and my nephews and I anxiously awaited the moment we could unwrap it.

When dessert time finally arrived, we spread out a kitchen towel and placed the Bunny Bungalow at the center of the table. My nephews couldn't wait to begin picking pieces off of the house, and begged us to let them finally smash it. Adorably, my younger nephew Bennett turned to me and said, "But wait, we can't smash it...it's too beautiful." I promised him we could bake as many cookie houses as he wanted, so he didn't have to worry about breaking this one. That brought swift and sufficient relief, and he was once again requesting his mallet.

With a couple of heavy serving spoons, Bennett and Logan made short work of demolition. The shards of Bunny Bungalow became delicious carrot cake crunch cookies, perfect with coffee and our array of other easter treats.

Cookie houses are now my go-to option for any holiday, dinner party, or get-together. The challenge is to come up with as many flavors, designs, and pairings as possible, to keep things interesting!
